Raw Peppermint Slice Recipe



8 slices


  • Prep time – 2 hours soaking cashews + 1 hour
  • Freezer time – 60 minutes
  • Fridge time –  30 minutes  



  • 1cup (110g) walnuts  
  • ½ cup (70g) pumpkin seeds  
  • ½ cup (40g) raw cacao 
  • 1 pinch salt 
  • ½ cup (100g) medjool dates with pips removed 
  • 2 tablespoons (30ml) Wellgrove Heart Health Olive Leaf Extract Extra Strength Liquid  

 Peppermint filling  

  • 1.5 cups (200g) raw cashews  
  • 1/3 cup (40g) desiccated coconut
  • 20 freshly picked mint leaves (4g) 
  • 1 tablespoon (15ml) Wellgrove Heart Health Olive Leaf Extract Extra Strength Liquid  
  • 3 tablespoons rice malt syrup  
  • 10 drops pure peppermint oil 

 Chocolate Top  


  • Start with soaking the raw cashews for the peppermint filling. Place the cashews in a bowl and cover with warm water. Leave to soak for minimum of 2 hours. 
  • Line a square 20cm x 20cm baking tin with baking paper.  


  • Begin now with making the base of the peppermint slice. Place the walnuts and pumpkin seeds in a food processor and blend till combined and forming a rough crumb. 
  • Add in the raw cacao and salt and blend again to combine with walnut and pumpkin seed mixture.
  • Add in the pipped medjool dates and Wellgrove Heart Health Olive Leaf Extract Extra Strength Liquid and process again until the base mixture comes together to a dough consistency. You should be able to pick a bit of it up and form it into a ball in your hands. If you feel it’s not sticky enough add another medjool date.
  • Spoon the base dough out into the prepared baking tin and use the back of a spoon to push out flat into the edges. Aim to create an even base layer and use the palm of your hand to give the base a nice press down. 
  • Place the baking tin with the base into the freezer for at least 30 minutes. 

 Peppermint Filling 

  •  Now make the peppermint filling. Into a high-speed blender add the soaked and drained cashews, desiccated coconut, mint leaves, Wellgrove Heart Health Olive Leaf Extract Extra Strength Liquid, rice malt and peppermint oil. Blend on high to bring to a smooth paste. You may need to stop the blender a few times to scrape down the sides.
  • Remove the baking tin with the base from the freezer and now spoon over the peppermint filling. You will need to scrape the peppermint filling out of all of the grooves of the blender, as its quite sticky. Use the back of the spoon to evenly spread the peppermint layer out over the base. Place the baking tin with the base and now peppermint layer back in the freezer, for a minimum of 30 minutes.  

 Chocolate Topping 

  •  Now make the chocolate topping by creating a double boiler. Place a medium sized saucepan with approximately 3cm of water in the bottom and then sit a bowl on top of the saucepan. Bring the water to the boil and turn to a very low simmer. Place the chocolate into the bowl and allow the steam underneath from the boiling water to slowly melt the chocolate. Once the chocolate is melted add the Wellgrove Heart Health Olive Leaf Extract Extra Strength Liquid and coconut oil and stir well. 
  • Remove the baking tray from the freezer with the base and peppermint filling and carefully spoon over the melted chocolate mixture. Carefully push it out to the edges to make sure the peppermint filling is nicely covered. Now hold the edges of the baking tray and give it a few gently bangs on the bench to make the chocolate coating even out over the top.
  • Place the raw peppermint slice into the fridge (or freezer if planning to eat at a later date) on an even surface to set for a minimum of 1 hour. 
  • To serve, use a warm knife to slice into squares.
  • For best longevity store in the freezer in an air-tight container.
